A Recipe for Holiday Warmth

As the winter winds inevitably settle upon us my thoughts turn to the upcoming holiday season while trying my best to acclimatize to the chill. One of the surest ways I’ve found to ready myself for the season and cope with the cold is to share a good bowl of hearty soup and some heart-felt conversation with a good friend.One of my favourite soups is a delicious and quick recipe for Cod Stew that was given to me by one of my dearest friends.  In spite of its unassuming name, I assure you it is absolutely delicious.  And so, I pass along the recipe to you now with a sincere hope that you make some time over the holidays to sit, savour it and enjoy it along with some good conversations with friends and loved ones. COD STEW
1 onion, chopped
½ a can of diced tomatoes (with liquid)
1 yam, peeled and chopped
1 package of frozen cod, chopped
½ cup of whipping cream Fry the onion in a bit of butter at the bottom of a soup pot. Add tomatoes, ¾ cup of water and the chopped yam. Cook until the yam is soft. Add cod and cream and simmer for another two minutes.  Season with salt and pepper to taste. Enjoy!
